  • Lota is a powdered, plant based gelling agent derived from red algae. It makes it possible to create very elastic and soft gelatines which, if they break, can be newly formed by leaving them to stand. Suitable for freezing.

About Product: GELLING : Jellies are one of the most characteristic preparations of classical cuisine and have evolved with modern cuisine. Until a few years ago, they were mainly made with gelatin sheets (known as “fish tails”); since 1997, agar, a derivative of seaweed, has been used. The kappa and iota carrageenans are also obtained from seaweed and have specific properties of elasticity and firmness that give them their own personality. To complete the family, we present gellan, which makes it possible to obtain a rigid and firm gel, and methyl, with high gelling power and great reliability. Texturas Iota is a gelling agent obtained from a type of red algae. Lota has very special properties and enables soft yet elastic gels. It can also be used for hot gelatin preparations. It dissolves when cold and should be heated to about 80°C to achieve gelation. The soft gel does not form while the mixture is being stirred. Hot jellies are also possible with Iota. Iota is also an ideal gelling agent for foods with a higher fat content such as sauces, cream and custards. Iota can be used to conjure up tempting creams, lightning-fast panna cotta and espumas.
