  • Lecite is a powdered soy lecithin – based emulsifier and perfect for creating airy textures. It dissolves in cold and liquid mediums. It is also suprisingly good for thickening seemingly impossible sauces.
  • How to use: Disslove 7g per litre at room temperature in an aqueous medium. Limited use in food. Maximum amount for specific foods: 30g per litre.
  • Characteristics: 1) Presented in a refined powder. 2) Cold soluble. 3) Very soluble in aqueous mediums. 4) Thanks to its great emulsifying power, Lecite is the ideal product for converting juices and other watery liquids into airs.
