The name “Demerara” comes from a variant of the Arawak word “Immenary” or “Dumaruni” which means “river of the letter wood” (wood of Brosimum guianense tree). Demerara sugar is so named because originally it came from sugar cane fields in the colony of Demerara. It naturally contains a small amount of molasses, which gives it a light brown color and caramel flavor. Tate & Lyle Demerara Sugar is made from the natural juice of sugar cane. This Demerara Sugar is a fruity, sweet-spiced sugar with large glassy amber crystals providing a distinctive textural crunch. It has a strong distinctive flavor which complements coffee.
