Muscovado sugar comes into two varieties: dark and light. Dark Muscovado Sugar has no molasses removed and is more common. Only a portion of molasses is extracted from light muscovado, which gives it a lighter flavor. Tate & Lyle Dark Muscovado Sugar is a moist sugar with fine, quick dissolving crystals and a dark appearance. The moisture, colour and flavour come from molasses extracted as part of the cane sugar refining process.

Dark muscovado cane sugar has a rich and aromatic flavor with a moist, fudgy texture make it ideal for full flavoured or savoury recipes. The Barbadian journey is inspired by the sticky and intense dark sugars traditionally known as ‘Barbados’ or Moist’ sugars that characterize this rich territory’s contribution to cane sugar grown in the sunshine. Often used in brownies, gingerbread, coffee or chocolate cakes, fudge, BBQ sauce, marinades, sweet and sour sauce and pancake syrups. The name ‘Muscovado’ carries premium qualities. Very tasty for richer tasting baking or, for example, with a crumble.
