Riscossa Linguine (Italian: [liŋˈɡwiːne] is a type of pasta similar to fettuccine and trenette but elliptical in section rather than flat. It is about 4 millimetres (5⁄32 in) in width, which is wider than spaghetti but not as wide as fettuccine. Linguine, a close relative of Fettuccine, is made from long, flat strands of pasta, but is thinner and narrower. The name linguine means “little tongues” in Italian, where it is a plural of the feminine linguina. Linguine was traditionally served with sauces such as pesto but others such as tomato or fish based sauces are popular as well. Linguine originated in Italy and is based on more traditional pastas. Probably associated most famously with white clam sauce (vongole), linguine actually holds onto sauces better than spaghetti due to its flat curvature. This curious attribute grants linguine an overall better eating experience in that it carries more flavor into each bite. Although linguine is an Italian pasta, it can be used in other cuisines, such as Chinese, where linguine is sometimes used in stir-fried noodles dishes in place of lo mein noodles, chow mein, or sesame noodles. This pasta Can be paired with any of your favourite sauces but is best known in a traditional pesto.

Cooking your Favourite Linguine Pasta :

1)Bring 4 – 6 quarts of water to a rolling boil, add salt to taste.

2)Add Pasta to boiling water.

3)Return to a boil. For authentic “al dente” pasta, boil uncovered, stirring occasionally for 9 minutes.

4) Remove from heat.

5) Serve immediately with your favorite sauce.
