Sambal Oelek Chilli Paste: Sambal Oelek is a spicy Indonesian chili paste made with hot red peppers and garlic. Its a favorite cooking aid across South East Asia. It’s typically made with hot red chilli peppers, salt, sugar, vinegar etc. Unlike Sriracha, Sambal Oelek is thick and chunky and contains whole jalapeno seeds. So… how is it different than Sriracha you ask? Sambal Oelek is a bit less processed than Sriracha. Sambal is thicker and contains less seasonings like garlic. XO Sauce: XO sauce is a spicy seafood sauce from Hong Kong with an umami flavour. It is commonly used in southern Chinese regions such as Guangdong. XO sauce is made of roughly-chopped shallot (small red onions) which are cooked with soyabean oil, chilli peppers, onions, and garlic. This dried hong kong style spicy sauce resembles the Fujianese shacha sauce. It should be used sparingly, as a little goes a long way.
