Chipotles in adobo are smoked and dried jalapeños rehydrated and canned in a sweet and tangy purée of tomato, vinegar, garlic, and some other spices, for a ruddy sauce that packs wicked heat but with plenty of balance and body. The chipotle chilies come in a convenient can for long term storage and are accompanied with a delicious smoky red adobo sauce. Chipotle chilies in Adobo sauce date back in history to a region that is now northern Mexico City, prior to the Aztec civilization. It is conjectured that the Aztecs smoked jalapeno chilies because the thick, fleshy, chili was difficult to dry and prone to rot. The Aztecs used the same “smoke drying” process for the chilies as they used for drying meats. This smoking allowed the chilies to be stored for a substantial period of time. Nowadays delicious plump jalapenos are picked for their taste and then slowly smoked to infuse them with that heady smoky chipotle flavour.     I bought these Chipotle chilis In Adobo Sauce to use in homemade Texas chili. I only need two chilis to bring up the heat level to my liking. A small can contains several chilis and is full of “juice,” so many bowls of chili can be made from one can. The price is reasonable. The produce is readily available. The flavor is great – strong

    So good it will make ya wanna slap your self! Made a yum chicken tortilla soup with just one pepper. Made some chipotle crema AND chipotle mayo with just the sauce. This stuff is so Good😊

    Great flavor, really kicks up meals, I find these a bit expensive for what you get, but recipes call for them, so I use one, two or maybe three chilies and then I’m left with a least half a can.
