KOUZINA® has partnered with farmers and farming families to create a range of top-quality Greek Ingredients. Halkidiki olives are named for the Halkidiki Peninsula in Greece. These olives are native to the peninsula and some areas of Northern Greece, where the trees thrive in the mild Mediterranean climate. In addition to their exceptional flavor, Greek olives are the basic components of the Mediterranean diet thanks to their high nutritional value. Furthermore, in conjunction with their low calorie intake, olives are perfect for everyday consumption containing a high level of vitamins A, B1 and C, calcium and iron. Halkidiki olives are large, pale green colored Greek olives that is oval in shape and usually harvested when it is young. It is brine-cured and has a firm textured meat providing a soft, full flavor, slightly tart and somewhat peppery. This olive is grown in the Halkidiki region of Greece, adjacent to Mount Athos, which is the reason for the olive being referred to as a Mount Athos or Halkidiki olive. It is also known as Chalkidiki olive since Halkidiki and Chalkidiki are used interchangably as a name for the Central Macedonia region of Greece where these olives are grown. Fruits are larger than the Conservolia variety averaging to 100-120 olives / kg. They are more elongated, with a prominent tip at the bottom. In addition, the olive may be referred to as a donkey olive because of its large size. Since it is a larger olive, it is often stuffed with ingredients such as blue cheese, almonds, dried tomatoes, citrus flavorings.
