RECIPES
CHEESE AND JALAPENO TOASTIE:
Set the oven to a low broil. Butter the sliced sliced French loaf and place on a baking sheet or tray and bake on low for 2-3 minutes until just slightly toasted. Remove from oven and set aside. In a mixing bowl, combine the rest of the ingredients: Hugo Reitzel Diced Green Jalapeno, diced red bell peppers, corn, diced onion, garlic, cilantro, lime juice, cheese, all dry seasonings with salt for taste. You can opt to have Hugo Reitzel Sliced Red Jalapeno as a topping or mix it into the corn mixture. Mix well. Spoon the corn mixture onto each toast. You can pile on as much or as little as you like. Grate cheese on each of the toasts and pop it back in the oven on low broil and set a timer for 3 minutes. Remove the toasts once the cheese has melted and is slightly golden in spots. Serve hot ! This can be served with ketchup, hot sauce or your favourite chutney
CHEESE AND JALAPENO POPPERS:
A very popular party favourite! In a bowl mix, cream cheese, grated mozzarella & cheddar cheese, Hugo Reitzel Diced Green Jalapeno and 2 spoons of hot sauce. Take small scoops, hand roll into small balls, place on a tray and set to freeze for 20minutes. For all the dry ingredients, mix into flour, spoons of powdered onion, garlic and salt to taste in a bowl. Whisk 2 eggs in a separate bowl and take dry bread crumb in a another bowl. Coat the balls individually with, first flour mixture, second egg and lastly dry bread crumbs. Lastly deep fry the balls until crisp on the outside for 1-2minutes. And there you go your very own homemade cheese and jalapeno popper.
JALAPENO CILANTRO MEXICAN CORN SALAD:
In a large pot of boiling water, cook the corn kernels for 10min. Drain and let cool. When the corn is cool enough to handle, toss the kernels in a large bowl with the Hugo Reitzel Sliced Jalapeño, red onions, cilantro, vinegar, extra virgin olive oil, salt and pepper. Taste and then start adding the honey or agave nectar as desired. The sweetness should balance out the vinegar. Make a few hours a head so the flavors infuse together
