Polyol‑type carbohydrate made from glucose fermented with Moniliella pollinis yeast. It has a sweetening power 0,6-0,7 times that of table sugar (sucrose).
It can be found in nature in fruits such as pears, melons, and grapes, but also in other food such as mushrooms and derived from fermentations like wine, cheese, and soy sauce.
Unlike other polyols, Erythritöl does not cause any digestive problems when used at high proportions.
