Couscous Salad:

Method:

Tip the couscous into a large bowl and pour over the stock. Cover, then leave for 10 mins until fluffy and all the stock has been absorbed.

Meanwhile, slice the onions and pepper, and dice the cucumber.

Add these to the couscous, fork through the pesto, crumble in the feta, then sprinkle over pine nuts to serve.

Moroccan Chicken-and-Couscous Soup:

Ingredients:

2 tbsp cooking oil, 1 chopped onion, 1 pound boneless chicken thighs cut into approximately 1 1/2-by-1/4-inch strips, 1/4 tsp cayenne, 1 tsp ground cumin, 1 3/4 tsp salt, 1/4 tsp black pepper, 1 sweet potato cut into cubes, 1 zucchini cut crosswise into 1-inches, 3/4 cup tomato puree, 1 quart water, 2 cups chicken broth/homemade stock, 1/2 cup couscous, 1/3 cup chopped parsley.

Methods:

In a large pot, heat the oil moderately. Add the onion and stir occasionally about 5 minutes. Increase the heat to moderately high. Add the chicken, cayenne, cumin, salt, and pepper to the pot. Cook, stirring occasionally, for 2 minutes.

Stir in the sweet potato, zucchini, tomato puree, water, and broth. Bring to a boil. Reduce the heat and simmer, stirring occasionally, until the vegetables are tender, about 10 mins.
