Millet and Quinoa Salad with Lemon Tahini Dressing

This refreshing salad combines the nutty bite of millet with the fluffy texture of quinoa, dressed in a zesty lemon tahini sauce.

Ingredients
 ½ cup Isvaari Little Millet, rinsed
 ½ cup Sol Authentic Peruvian White Quinoa, rinsed
 1 Cucumber, chopped
 1 Tomato, Chopped
 ½ Red onion, thinly sliced
 ¼ cup Chopped parsley
 ¼ cup Chopped mint
Dressing
 2 tbsp Tahini Paste
 ¼ cup Lemon Juice
 2 tbsp Sol Authentic Spanish Extra Virgin Olive Oil
 1 Clove garlic, minced
 ¼ tsp Salt
 ¼ tsp Black pepper
Preparation

1. Cook the rinsed millets and quinoa separately according to package instructions.

2. In a bowl, combine the cooked millets and quinoa, chopped cucumber, tomato, red onion, parsley, and mint.

3. To make the dressing, whisk together tahini paste, lemon juice, olive oil, garlic, salt, and black pepper.

4. Pour the dressing over the salad and toss gently to combine.

5. Serve chilled, garnished with additional herbs if desired.
