One of our favorite Greek dishes is the simple yet elegant and oh-so-yummy summer salad. Fresh veggies mixed in with rich, yummy feta cheese, olives, and vibrant Italian Olive Oil increases both the health and taste quotient. Add to that the simplicity of preparation and how visually stunning it looks and you have an Instagram-worthy dish in no time flat!
1. Make the dressing: In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt, and several grinds of pepper.
2. On a large platter, arrange the zucchini, green pepper, cherry tomatoes, feta cheese, red onions, and olives. Drizzle with the dressing and very gently toss. Sprinkle a few generous pinches of oregano and top with the mint leaves. Season to taste and serve.
