France is a land of decadent desserts, but not all French classics are technically difficult to make. Take for instance these light and fluffy meringues, served with Dark chocolate mousse and coffee syrup. Each one of the components is made with 2-3 ingredients and barely takes any time to prepare, yet is an ooh-la-la on the decadence scale.
1. Preheat the oven to 120°C. Line two baking trays with baking paper and lightly grease with Olive Oil Cooking Spray.
2. Using an electric mixer fitted with a whisk attachment, whisk egg whites and a pinch of salt to soft peaks. Add the isvaari Light Brown sugar, 1 tablespoon at a time, whisking until thick and glossy.
3. Place 5 dollops of meringue onto each tray. Bake, swapping trays halfway through cooking so meringues cook evenly, for 1 hour 45 minutes. Turn off the oven and leave the meringue in the oven with the door ajar for 2 hours or until cooled completely.
1. For the mousse, whisk the cream in an electric mixer until soft peaks form. Fold 1/3 cup cream into melted Isvaari 70% dark chocolate to loosen slightly, then fold in the remaining cream. Cover and chill for at least 1 hour.
1. For the syrup, combine all ingredients in a saucepan over medium-low heat, stirring until sugar dissolves. Simmer for 10 minutes or until thickened and syrupy.
1. To assemble, layer the meringues and the mousse, then drizzle over coffee syrup.
