
- Boil 500ml of water.
- Add 5g sliced galangal, 2 lemongrass, 2 kaffir lime leaves, crushed 2 chilies, and 8 mushrooms (quartered).
- Bring back to the boil.
- Add 10 prawns, 1 tsp. sugar, 1 tbsp.
- Blue Elephant Fish Sauce and 35g Tom Yam Chili Paste.
- Simmer until cooked through.
- Remove from the heat, add 1 tbsp. lime juice*.
- Garnish with 3 fresh coriander leaves and serve in a soup bowl.
Add to your liking.
Use the fish sauce to adjust salt to your taste
